What goes on in our Factory?

Do you know that all of our corn tortillas and chips are gluten free? We actually have a wall that separates our flour lines from our corn lines to ensure that there is never any cross contamination of our gluten free line. We never move equipment from one side to the other; it is like we have two factories.

 

We run our flour line 4 days a week and our corn line 5 days a week. We run anywhere from 6 to 12 hours shifts but have more capacity if needed. We are planning on growing the tortilla business so we will eventually use that capacity.

 

So when you pick up a package of El Lago corn tortillas you will know that we have taken every precaution to ensure that they are gluten free.

    Do you have different people that work the gluten free lines that only handle the gluten free foods? What happens when you box the products? Do those same people handle the packing as well and are they packaged in a separate line to help eliminate cross contamination?

    This is a great question! A wall in our factory separates our gluten free line from the flour line. No gluten materials come through that section of the factory. In fact that side of the factory was chosen to be gluten free since it was adjacent to the corn silo.

    Each day, people are assigned to the corn or flour lines. Once on the line they are not changed for the day. No one can move from the flour line to the corn line once assigned to the flour line.

    Once the tortillas are packaged and put in a case they are moved by pallet jack and stored in the warehouse. The warehouse has two distinct areas; one for corn and one for flour. We store the gluten free tortillas in the cooler waiting to ship.

    In addition to all the things we do above to keep our tortillas from getting contaminated, we don’t allow any of the equipment to be moved from the flour line to the corn line at all. If anything breaks in the corn line we can’t borrow it from the flour line this would contaminate it so we have to keep a stock of parts and maintenance on duty to keep our tortillas rolling off the press.

    Do you still have pick up service open to the public at your store? How much are your 5# bags of chips? What are your hours? Thank you! John F.

    I am sorry to say that our little store closed last year. We have a $50 minimum if you walk in and are not in our system. This is because we were spending a lot of time running down product. This is a topic of discussion at El Lago and we may be opening something to address this in the future.
